With the term "Acholado" means, according to Standard Technical Peruana, the pisco obtained from the mixture of grape varieties Pisquera authorized. The Acholado BIONDI, is the product of a judicious mix (blend) Italian grape, spicy, fragrant, with Black Creole, not aromatic, with strength and character; grown in the Valley of Moquegua in southern Peru, 1100 meters above sea level, with dry weather and healthy, hot and cold at the appropriate time and plenty of sunshine, giving rise to this pisco odor and flavor lightly aromatic, with a long body and finesse.

The contest in the prestigious International Wine & Spirit Competition 2005 in London, won meritorious bronze medal.
